Knapp Harvest offers products made from what we’ve harvested on Knapp Ranch, our partner farm, Osage Gardens, and other locally grown and produced products from the Vail and Roaring Fork Valleys. Featuring:
- Fresh, organic produce, meats, and dairy, prepared foods, baked goods, and more
- Our very own Second Nature Gourmet prepared food, casseroles, soups and salads
- Honey, lip balm, and hand cream made from our bees
- Products from other handcrafted local artisans from right here in our valley
- Also available is our coffee table book – Living Beneath the Colorado Peaks: The Story of Knapp Ranch – along with books written by other local authors.

Microgreens
Microgreens
We started growing microgreens in 2013 when The Farm at Knapp Ranch was established (after our research and development uncovered the need.) Microgreens, a specialty genre of greens, are vegetable greens that usually have a pair of small, partially developed leaves. Grown year-round in our hoop houses, they’re prized for their nutritional value and distinct flavor. Microgreens are used to enhance soups, salads, sandwiches, and as a garnish. Microgreen varieties change with the seasons.

Greens are leaf vegetables, the edible leaves and stems of plants. Used in salads and as garnishes on plates, greens can also be sautéed, stewed or steamed.

Growing vegetables in the Rocky Mountains is challenging. The Farm at Knapp Ranch prides itself on growing hearty and colorful produce including summer squash, carrots, beets, and a variety of lettuces.

At the same time microgreens became popular with the restaurants, the demand for mushrooms mushroomed too! We spent five years of research and development to get their environment just right before we started selling them to chefs. Now, grown at 9,000 feet, they are proving to be quite prolific, with many popular, thriving varieties.
